Mr. Arcaro rented a small diner on Main St. Old Forge PA. I remember seeing him on his hands and knees cleaning, painting walls and shining up the chrome fixtures. Mr. Arcaro started with the soup of the day. All his soups were made from scratch including chicken parts even the bones. Many times you would see his homemade Sopressata drying. Mr. Arcaro made homemade sausage, meatballs, tripe, sofritta while engaging in conversation with his patrons. It was nail biting waiting for the first customer to arrive. The first customer and the first dollar billing was posted on the wall. In no time at all the need to expand was necessary. Mr. Arcaro, ( Butch) decided to purchase the building which included a barber shop and apartments. The Willard Room dining room was created. Mr. Arcaro had the room remodeled into a small bistro atmosphere. He updated the outside of the building which improved the appearance of Main St. Old Forge PA. The Willard Room was named after a race horse he co-owned.
